
If you’re looking for an easy, lazy meal that your whole family will love, you have to try Egg Roll in a Bowl. It reheats beautifully, which makes it perfect for meal prep. I used ground beef, but feel free to swap in ground chicken or turkey if you’re after lighter macros or on a health kick. So simple, so satisfying!

This is such a staple recipe that’s been in our meal rotations for many years! I hope you try it and love it!
Ingredients
- 1 lb ground meat (I used 90% fat ground beef)
- 1 lb coleslaw mix (any veggies will do but coleslaw mix and adding some mushrooms is our favorite)
- 1/4 cup soy sauce
- 1 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 2 tbsp sweetener (I used agave nectar)
- 1 tsp minced ginger
- 2 tsp minced garlic
- Green onion for garnish (optional)
- Cucumber for garnish (optional)
- Toasted Sesame Seeds for garnish (optional)
Directions
- Prepare the Marinade: Mix together soy sauce, rice vinegar, toasted sesame oil, sweetener, ginger, and garlic.
- Prepare Pan: In a wide pan (with lid), brown ground meat until 90% cooked through. There should be some pink on the edges of the meat.
- Add in Extra Ingredients: Add in marinade and veggies, lower temperature to low, cover with lid, and let cook for an additional 2-3 minutes.
- Garnish and Serve: Serve with rice. Garnish with green onion, cucumbers, or sesame seeds.
Notes
To make macro friendly, use lower fat ground beef, ground chicken, or ground turkey.
