Easy Greek Chicken Meatballs + Cucumber Beet Salad Recipe (High Protein Meal Prep)

I’ve been in an overall cooking rut lately. Thankfully, my friend Leslie Stoke posted a turkey meatball recipe that looked so delicious, I had to try it. I used ground chicken instead but mostly stuck to her original recipe. I was able to meal prep four individual meals and make one full dinner for the family. The kids enjoyed it and even requested it again for next week, a definite win! You can find the recipe for the meatballs and salad below.

Chicken Meatball recipe can be cut in half for 4 portions. I doubled it to make extra for some easy meal prep. Find the recipe below.

Cucumber Beet Salad:
6 mini cucumbers, 3 green onions, 10 small cooked beets, 1/4 cup dill, 1/2 cup diced red onion, 1/2 bell pepper, 1/2 cup feta cheese, 1 tsp sea salt, juice of one lemon, 2 tbsp olive oil. Mix all ingredients and let sit for 10-15 minutes before enjoying.

Ingredients

  • 2lb ground chicken
  • 2 eggs
  • 1/2 cup bread crumbs (I toasted sourdough bread, blended it, then toasted it in a pan for a couple of minutes)
  • 1/2 tsp minced garlic
  • 1/2 cup feta cheese
  • 1/2 cup diced red onion
  • 1/4 cup dill
  • 1 tsp dried oregano
  • zest of 1 lemon
  • 1 tsp sea salt
  • 1/2 tsp black pepper

Directions

  1. Preheat oven to 400 degrees.
  2. Mix all ingredients.
  3. Form roughly 24 meatballs, place onto a parchment paper covered baking sheet, and bake for 20 minutes.
  4. Flip meatballs halfway through.
  5. Enjoy with tzatziki sauce, pearl couscous and a refreshing salad.

Notes

Feel free to use any carb as a side or nix it all together for a high protein option!
Good in the refridgerator up to 4 days.
