Never in a million years did I think I would be writing this post, but here I am. Matthew McConaughey’s tuna salad is having a moment on social media and I’m glad I tried it. When I first learned about this recipe, I was slightly taken aback by the addition of wasabi, frozen peas and apples, but I must say, this tuna salad, is quite delicious. The crunchiness of the corn, apple paired with the sweetness of the agave, and the spiciness of the wasabi and jalapeños makes this a winning combo. 10 out of 10 in my books.

I paired this tuna salad with some flaxseed chips, and it was a winning combo. I can only imagine this would be great in between two slices of bread. This is delicious. Make it.
Ingredients
- 2 cans of tuna in water, drained
- 1 cup mayonnaise
- 2 tbsp apple cider vinegar
- 1 tsp wasabi
- 1 tbsp Italian dressing
- 1/2 red onion, diced
- 1 dill pickle, diced
- 1/4 cup pickled jalapeño slices
- 1/2 apple, diced
- 2 tbsp agave nectar
- 1/2 cup canned corn, drained
- 1/2 cup frozen peas, defrosted
Directions
- Prepare Dressing: In a bowl, add mayo, wasabi, Italian dressing, vinegar, agave and mix.
- Assemble the Salad: In a large bowl, add tuna, mixed dressing, onion, pickle, jalapeño, apple, corn, and peas. Mix together thoroughly.
- Storage: In an airtight container, store in the refrigerator for up to 3 to 4 days.
Notes
It just keeps getting better after being refrigerated. This would be great for meal prep!
