Steak Frites with Creamy Garlicky Mushroom Peppercorn Sauce

My husband took the kids on a little vacay so I could stay home and nest. In his words: “this is the last time for a LONG time you’ll have some alone time.” So I soaked it in: slow moments, a prenatal massage, clearing out little corners of the house, wandering the mall without a clock, resting on the couch, and cooking myself a simple but decadent dinner to enjoy with a quiet movie. Grateful for this pause before the beautiful chaos ahead.

Steak Frites with Creamy Garlicky Mushroom Peppercorn Sauce

Cook your preferred cut of steak your favorite way.

I like either ribeye or new york strip. I season with salt & pepper and pan fry on both sides for about 4-5 minutes. That’s it. Easy peasy.

Ingredients (Cream Sauce + French Fries)

  • 3 Mushrooms, sliced
  • 1 tbsp minced garlic
  • 1 tbsp salted butter
  • 1/2 cup heavy cream
  • 1/3 cup cognac (sub for white wine, brandy, sherry wine)
  • 3/4 cup beef stock
  • optional: 1 tsp corn starch (if it doesn’t thicken up to your liking)
  • 1 Russet potato
  • 2-3 cups of neutral oil (I used avocado oil)
  • Salt (I used Truffle Salt that I received as a gift and some Truff Truffle Oil)

Directions

  1. Sauté mushrooms until water seeps out.
  2. Add in garlic and saute for another minute, making sure not to burn the garlic.
  3. Deglaze with cognac and let simmer for 1-2 minutes.
  4. Add in beef stock and let simmer for another 2-3 minutes.
  5. Add in heavy cream and butter and let simmer until thickened (about 4 minutes)
  6. If you get impatient like I do, add 1 tsp of corn starch to the sauce and let simmer for 1 minute until thickened.
  7. Serve with your favorite cut of steak! 
  8. Cut russet potato to desired size and soak in an ice bath for 15-30 minutes.
  9. Fill a pot with avocado oil (or your choice of oil), and heat on medium.
  10. When oil is hot, batch fry your French fries for 6-8 minutes.
  11. Strain on a paper towel and let cook for 10 minutes.
  12. Raise the heat on the stove for the pot of oil to medium-high. 
  13. Fry French fries again for 3-4 minutes and immediately remove to a big bowl, salt, add truffle oil if desired, and serve immediately.

Notes

Feel free to season your double fry french fries as you like!
