I came across a video on TikTok by creator Kristi and I knew I just HAD to make it. The banana bread looked so bouncy, chewy, and oh so incredible. I lowered the sugar content because I don’t like my banana bread overly sweet, and it came out perfect (for me)! It would be fun to add some chopped walnuts and most definitely some semi sweet chocolate chips next time!

Ingredients
- 4 ripe mashed bananas
- 3 eggs
- 1/2 cup (1 stick) melted salted butter
- 1 tbsp vanilla extract
- 1 cup whole milk
- 1lb (16 oz) Mochiko Flour or Sweet Rice Flour
- 1 cup brown sugar (original creator added 1 1/4 cup)
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
Directions
- Preheat Oven to 350 degrees F.
- Prepare the Wet Ingredients: In a bowl, add mashed bananas, eggs, melted butter, vanilla extract, and whole milk. Mix thoroughly and set aside.
- Prepare the Dry Ingredients: In a large bowl, add Mochiko Flour, brown sugar, baking powder, baking soda, and salt and mix until combined.
- Add Wet Batter into Dry Mixture: Add about 1 cup of wet batter at a time into the dry mixture and mix until well combined.
- Bake: Add batter into a 13″x9″ greased baking dish and bake for 50 minutes in the middle of your oven.
- Let Cool and Serve: Cut into squares and enjoy!
